The phin is one of Vietnam’s most recognisable coffee tools. Simple, slow, and deeply cultural, it has been used for generations to brew everything from street-side iced coffee to quiet morning cups at home. The Limitations of Traditional Metal Phins
Metal phins are iconic, but they come with practical limitations that often go unnoticed. They heat up extremely quickly and can easily burn fingers during use. At the same time, metal conducts heat away from the brewing water, causing temperature to drop mid-extraction. When this happens, sweetness and balance are compromised, often resulting in a flatter cup. Over time, metal phins may dent, oxidise, or retain metallic odours, especially with frequent daily use. When working with carefully sourced Vietnamese speciality coffee, these small inefficiencies add up and quietly affect the final taste in the cup.

Rethinking the Phin Through Material Choice
The ZeroToOne Phin is designed with intention from the inside out. It is made from food-grade virgin polypropylene, also known as plastic no.5, a material widely trusted in professional food and beverage applications. This material is food safe, non-reactive, and heat-resistant up to 120 degrees Celsius. Most importantly, polypropylene has an extremely low heat conductivity, meaning it does NOT draw heat away from the brewing water. In simple terms, the phin stays cool while the coffee stays hot.
One small but important detail in phin brewing is the water exit design at the base of the phin. With many traditional metal phins, the holes underneath are often uneven or too small, making them easy to clog with coffee grounds. When this happens, water drains more slowly and unevenly through the coffee bed, leading to uneven extraction. A modern phin with a carefully angled base (164.8°) and optimised hole design helps guide water flow more smoothly, reducing clogging and creating a more balanced and consistent brew.

Why Heat Retention Changes the Taste?
Coffee extraction depends heavily on stable temperature. When the heat drops too quickly, the sweetness and complexity do not have time to fully develop. By using a low heat-conductive material, the ZeroToOne Phin maintains brewing temperature for longer, allowing the coffee to extract more evenly. The result is improved sweetness, better clarity, and a more forgiving brewing process, even without perfect technique. This allows the coffee itself to shine, rather than being limited by the brewing tool.
